Here's a simple recipe for Pumpkin Pie Spiced Chia Pudding:

Ingrediants

  • 3 tablespoons chia seeds
  • 1/2 teaspoon pumpkin pie spice blend
  • 1/2 cup hot water, nut or seed milk (I love to use hemp milk which adds even more Omega-3's!)
  • 1/4 teaspoon vanilla (optional)

Directions

In a medium bowl, mix the chia seeds with the pumpkin pie spice. Pour hot water, nut or seed milk, and vanilla (if desired) over the mixture. Mix well and let it sit about 20-30 minutes to firm up. If you'd like, you can top with a drizzle of honey, toasted nuts, coconut flakes or berries. Enjoy!
