This RI Food Vlogger's Italian Cooking Is Pasta-tively Amazing

I was raised on Italian food, so when an old friend recently connected me with Alexia D. of the Rhode Island based blog UHadMeAtKitchen.com and I started scrolling her cooking videos and recipes, some of the best memories from my childhood came flooding back. Making Pizzelles for the holidays. (I know we still have a Pizzelle iron somewhere?!?) Family dinners with soup and lasagna courses. (For Thanksgiving, my mom always made chicken escarole soup and lasagna in addition to the traditional turkey, stuffing, and mashed.) Also those ubiquitous yellow cans of Pastene kitchen ready tomatoes stacked up in the pantry. (We have some sitting in our food cabinet as I am typing this rn by the way.)

Think About The PASTA-bilities

With all that in mind, I was ecstatic when Alexia offered to create a special Italian-inspired, meat free (as you may know I have been mostly vegetarian for the last 7 or 8 years) recipe exclusively for me and all of my online friends.

And when I realized it features three of my all time favorite things to eat — pasta, eggplant and bread — I went a little pazza!
